Pineapple Chorizo Meatball Nacho Bites

  • 1 (16 oz.) package Rosina Artisan Pinapple Chorizo Meatballs
  • 1 package taco seasoning mix
  • 1 can (16 oz.) pork & beans
  • 1 onion, chopped
  • 1 bell pepper, seeded and chopped
  • 1 can tomato soup
  • 1 bag tortilla chip scoops
  • Optional toppings: cheddar cheese, guacamole, sour cream, salsa, shredded lettuce


Combine seasoning mix, pork & beans, onion, green pepper and soup in a food processor. Puree until smooth. Add frozen meatballs to your crock pot and pour the pureed sauce over the top of the meatballs. Cover crock pot and cook on high for 4 hours. Assemble appetizers by adding meatball to tortilla chip scoop and top with favorite toppings.
