Servings: 5   |   Preparation: 30 Mins

  • 1 (26 oz.) package Rosina Turkey Meatballs
  • 2 bags boil in brown or white rice
  • 3 garlic cloves, chopped
  • 1 1/2 tablespoons peeled and chopped fresh ginger
  • 1 tablespoon sambal chili paste
  • 1/4 cup hoisin sauce
  • 3/4 cup chicken stock
  • 1 zucchini, cut into half moons
  • 2 green onions, sliced thin
  • 2 tablespoons sesame oil or olive oil
  • 1 tesapoon black and white sesame seeds (optional)

Cook turkey meatballs according to package directions. In a medium pot, heat water to boiling and cook bags of rice according to package instructions. While the rice cooks, heat oil in a large sauté pan over medium-high heat, add in the zucchini and cook, stirring occasionally for 2-3 minutes. Add the garlic and ginger and continue to cook until zucchini is lightly browned and softened. Stir in the chili paste, hoisin sauce and the chicken stock. Add the turkey meatballs to the pan and cook for 3-5 minutes while stirring occasionally until the sauce thickens and the meatballs are heated through. Divide the cooked rice between dishes, top with the finished meatballs and zucchini. Garnish with the green onions and sesame seeds.
