Angus Meatball Skewers

  • 1 package (20 oz.) Rosina Angus Beef Meatballs
  • 1 cup margarita mix
  • 1 tablespoon white sugar
  • 2 garlic cloves, minced
  • ¼ cup vegetable oil
  • 8 metal skewers or bamboo skewers
  • 1 zucchini or squash, cut in half and into half moons
  • 1 onion, cut into 1 inch chunks
  • 1 large red or green bell pepper, cut into 1 inch pieces


Combine margarita mix, sugar, salt, garlic, and vegetable oil in a bowl or resalable plastic bag. Toss meatballs in marinade and marinate at least 30 minutes. Preheat a grill for medium heat. Assemble skewers, alternating meatballs with vegetables of choice. Grill skewers for about 10 minutes.
